Onion Samosa/Vegetarian Samosa

Onion Samosa/Vegetarian Samosa

Ingredients

1. Big Red Onion - 1 - cut into small pieces
2. Pressed Rice or Poha - 1/2 a cup - Optional
2. Red Chilli powder - 1/2 tea spoon
4. Salt - 3/4 tea spoon
5. Samosa/Spring Roll Base
6. All purpose Flour/Maida - 2 tea spoons
7. Water - 2 to 3 tea spoons
8. Cooking Oil - As required - To deep fry the samosas

Procedure:

1. Mix the finely chopped onion, pressed rice/poha, salt, red chilli powder in a bowl and keep it aside.

2. Mix 2 tea spoons of all purpose flour with about 2 tea spoons of water to form a fine paste and keep it aside separately.

3. Take one spring Roll/Samosa base (readily available in Indian/Asian grocery stores) and roll it to form a cone.

3. Fill it up with 2 tea spoons of Onion-poha mixture

4.Fold the open edge of the cone to form a triangular onion filled samosa. Apply the flour paste to seal the edge properly so that the filling does not spill out when the samosas are fried in oil.
5. Create a batch of samosas by following the same steps as above.

6. Heat cooking oil in a deep vessel and fry the samosas in batches till they become golden brown. Double fry them to make them crispy.

7. Same procedure can be followed to create samosas with potato filling.
Cut about 2 big potatoes  into cubes and boil them till they are soft. Add 3/4 tea spoon of salt , 1/2 tea spoon of red chilli powder, finely chopped cilatro leaves  and onion to this and mash the potatoes well and use this mixture as filling for the samosas.

7. Hot and yummy onion samosas are ready to eat. Tomato Sauce and Green mint or chilli chutneys go well with Samosas.

Enjoy crispy and delicious samosas!
