Rava Kesari/Semolina or Sooji Kesari

Rava Kesari/Semolina or Sooji Kesari

Ingredients

1. Dry Sooji/Rava/Semolina - 1 cup
2. Sugar - 1 to 1.5 cups
3. Ghee/Clarified Butter - 3/4 cup
4. Elachi/Cardamom powder - about a pinch or Cardamom seeds - a few(from about 3 pods)
5. Food colour - Red or orange or yellow
6. Water - 2 cups
7. Cashew nuts - about 10

Procedure:
1. Heat a wide pan in stove. Add about a tea spoon of Ghee/clarified butter and roast the sooji/semolina/rava in it till it changes colour to light brown and till the raw smell goes away.
2. Transfer this roasted rava to a plate and keep it aside.
3. Now in the same pan, boil 2 cups of water and add sugar to it. Allow it to boil and keep stirring till all the sugar dissolves well.
4.At this stage add a pinch of food colour to it and also the cashew seends/powder to this.
5.Now add the semolina slowly and keep stirring the mixture so that no lumps are formed.
6. When the Semolina is cooked well, add Ghee to this mixture slowly and keep stirring so that ghee is thoroughly mixed with semolina. 
7. After a while, ghee starts oozing out and leaves through the edges and kesari does not stick tp the pna.
8. At this stage, add the roasted cashew nuts to the kesari.
9. Transfer this to another vessel.
10. Serve a scoop of hot kesari in a plate.
