Paneer 65 - Crispy Paneer Fry

Ingredients
1.Paneer cubes - 400 gms
2. Green Chillies - 4 to 53. Ginger garlic paste - 1/2 tea spoon or ginger - 1/2 inch piece and garlic pod - 14. Chilli powder - 1 tea spoon5. Curry powder or garam masala powder - 1 tea spoon6. All purpose flour - 1/4 cup7. Corn starch - 1/4 cup8. Water - about 1/2 cup9. Salt - 1/2 tea spoon. Please adjust as per your taste.Procedure1. Mix all the dry ingredients in a bowl - All purpose flour, corn starch, chilli powder, garam masala or curry powder, salt etc











2. Grind the green chillies, ginger and garlic together into a coarse paste and add to the dry ingredients. 
3. Add 1/4 to 1/2 cup of water, a few spoons at a time and mix the ingredients into a thick batter. Batter should not be too thin and watery else it will not stick to the paneer and will separate out when fried in the oil.
4. Add the paneer cubes in this batter, mix well and marinate this for about 5 to 10 minutes.
5. Heat Oil in a pan in medium heat. Add a small drop of the batter and check that the batter raises above slowly and starts becoming crispy. 
This is the right heat for deep frying the paneer 65.If the paneer batter settles down or sticks to the bottom of the pan, the oil is not hot enough yet and if the batter raises very quickly and starts floating too soon, then the oil is too hot. Adjust the heat accordingly.
6. Start frying the  paneer cubes dipped in the batter, in the hot oil.

7. Keep turning them gently with a fork in  the hot oil till they turn golden brown.
8. Place in a paper towel so that the extra oil if any is drained.
9. Serve hot. This can be a wonderful tea time snack or it can be served as a starter before any main course or can be served as a side-dish for various kinds of rice dishes.
